Believe it or not, orzo isn’t rice, it’s a type of pasta. This light carbohydrate pairs perfectly with chopped carrots, celery, greens, basil, and vinegar dressing. Mix together, refrigerate, and tomorrow’s lunch is ready to go.
Edamame Corn Salad
Looking for extra protein after a workout? Instead of grabbing a heavy protein shake, try an edamame corn salad. Steam the edamame, cool in ice water, then mix with corn, cucumbers, and carrots. Toss with a dressing of your choice and you’ll have a post-workout snack that’s perfect for the summer weather.
Hummus & Veggie Wrap
Instead of making a hot wrap, try a hummus and veggie wrap for an easy, grab-and-go lunch. Spread the hummus onto the wrap and load it up with your favorite sliced veggies. You can even use some of the leftover salads from above! Fold the wrap like you would a burrito and nosh away.
